After migrating data you realize some option is migrated to WooCommerce ask the user to input the option and other parameters before allowing them to go check out. Because options have been migrated to Variable Product, which is required to select before check out, you just set a default value for those variations

If you would like to create the custom option optional or required we can recommend using the WooCommerce Product Addons plugin, which allows you personalize products
